Bueno Cake

Ingredients (with quantities):

    Biscuit Base:
    👉 5 eggs
    👉 200g sugar
    👉 330g flour
    👉 50g unsweetened cocoa
    👉 16g baking powder
    👉 300g whole whipping cream

    Bueno Mousse:
    👉 280g mascarpone
    👉 227g full-fat liquid cream
    👉 60g icing sugar
    👉 80g melted milk chocolate
    👉 4 tbsp Bianca spread

    Chocolate Topping:
    👉 160g milk chocolate
    👉 125g hot 30% full-fat liquid cream
    👉 30g butter

Instructions:

Biscuit Base:

👨‍🍳 1) Whisk eggs with sugar until tripled in volume.

👨‍🍳 2) Fold in flour, cocoa, and sifted baking powder.

👨‍🍳 3) Whip cold whipping cream and fold into the dough.

👨‍🍳 4) Bake in a 25cm pan at 180°C for 20-25 minutes. Cool completely.

Bueno Mousse:

👨‍🍳 1) Whip mascarpone, liquid cream, and icing sugar until whipped.

👨‍🍳 2) Add melted chocolate and Bianca spread, whip to a smooth cream.

Assembling the Cake:

👨‍🍳 1) Cut the biscuit in half lengthwise. Optionally, soak with a little milk.

👨‍🍳 2) Spread the Bueno cream, then place the second biscuit half. Refrigerate for 30 minutes.

Chocolate Topping:

👨‍🍳 1) Pour hot cream over milk chocolate, mix, and add butter.

👨‍🍳 2) Let the topping cool before covering the cake.

👨‍🍳 3) Trim the cake sides with a sponge cake knife.

👨‍🍳 4) Drizzle melted milk chocolate on top and add Bueno for a tempting finish.
