    👉 25g butter

    For Vanilla Pastry Cream:
    👉 250g milk
    👉 110g whipping cream (35%)
    👉 Half vanilla stick
    👉 2 egg yolks (40g)
    👉 25g sugar
    👉 25g cornstarch
    👉 60g white chocolate
    👉 25g butter
    👉 25g gelatin mass (5g gelatin powder dissolved in 20g water)

Instructions:

Vanilla Pastry Cream::

👨‍🍳 1) Boil milk, cream, and vanilla. In a bowl, mix egg yolks, sugar, and starch.

👨‍🍳 2) Gradually pour the boiled mixture into the egg mixture. Cook for 2 minutes until thickened.

👨‍🍳 3) Add white chocolate, butter, and gelatin. Blend until soft and shiny. Cool in the refrigerator for at least 4 hours. Whisk before filling.

Brioche Dough:

👨‍🍳 1) Mix flour, sugar, salt, yeast, and vanilla in a mixer bowl.

👨‍🍳 2) Add eggs, milk, and butter. Knead at low speed until mixed. Rest for 30 minutes.

👨‍🍳 3) Knead at high speed for 7-10 minutes until elastic. Refrigerate overnight (12-24 hours).

Donut Shaping and Frying:

👨‍🍳 1) Shape cold dough into 30-35g balls. Allow them to rise for 1.5-2 hours.

👨‍🍳 2) Heat oil to 165°C. Fry donuts for 1.5-2 minutes per side.
