    👉 2 teaspoons salt (divided)

    👉 50 grams Parmesan cheese
    👉 Parsley (to taste)
    👉 1/2 cup breadcrumbs
    👉 2 eggs
    👉 Olive oil (for Rub)

Instructions:

👨‍🍳 1) Prepare Potatoes: Cut peeled potatoes into very fine pieces. In a pot over low heat, combine potatoes, cover with water, and add 1 teaspoon of salt. Cook for 15 minutes until potatoes are easily punctured. Drain and transfer to a bowl.
