    👉 120 ml vegetable oil
    👉 3 large eggs
    👉 300g all purpose flour
    👉 2 tsp baking powder
    👉 1 tsp baking soda
    👉 1 tsp cinnamon powder
    👉 ½ tsp salt

    Walnut Crumbles:
    👉 50 g brown sugar
    👉 80g all purpose flour
    👉 80 g walnuts
    👉 80 g unsalted butter
    👉 ½ tsp salt

    Cream Cheese Frosting:
    👉 250 g cream cheese
    👉 50 g powdered sugar
    👉 1 tsp vanilla extract
    👉 370 ml whipping cream

Instructions:

👨‍🍳 1) Preparation: Preheat the oven to 350°F (180°C) and line a muffin tin with cupcake liners.

👨‍🍳 2) Make Carrot Muffins: In a bowl, mix shredded carrots, chopped pecans, brown sugar, buttermilk, mashed pineapple (or substitute), vegetable oil, and eggs until well combined. Add all-purpose flour, baking powder, baking soda, cinnamon powder, and salt. Mix until just combined. Spoon the batter into the muffin tin, filling each cup about two-thirds full.
