    👉 40g Water

    Custard Filling:
    👉 500g Whole Milk
    👉 80g Egg Yolks
    👉 200g Whole Eggs
    👉 90g Sugar
    👉 1.5g Salt
    👉 1.5 tsp Vanilla Extract

    Dough:
    👉 520g Flour
    👉 11g Salt
    👉 60g Sugar
    👉 150g Eggs
    👉 110g Milk
    👉 12g Yeast
    👉 90g Butter
    👉 200g Butter (for lamination)

Instructions:

👨‍🍳 1) Prepare Caramel Topping: Heat sugar over low heat until it melts and turns deep brown. Add water and stir until caramel is dissolved. Divide evenly into cupcake tray slots.

👨‍🍳 2) Make Custard Filling: Whisk together milk, egg yolks, whole eggs, sugar, salt, and vanilla extract until combined. Heat milk to a boil, then slowly pour into egg mixture while whisking constantly. Divide mixture into cupcake pan and bake in a water bath at 135°C for 20 minutes. Chill overnight.

👨‍🍳 3) Prepare Dough: Mix all dough ingredients (except lamination butter) until smooth. Flatten dough into a rectangle, wrap, and freeze overnight. Roll out dough and encase lamination butter. Fold dough and freeze. Repeat folding and chilling steps. Roll out dough, cut into discs, and proof until tripled in volume.

👨‍🍳 4) Assemble and Bake: Press dough down and bake at 190°C for 20 minutes. Reduce temperature to 150°C and bake for additional 13-15 minutes.

👨‍🍳 5) Serve: Let pastries cool, then place a portion of creme caramel onto each danish.
