Instructions:
👨🍳 1) Prepare Cranberry Jam: In a saucepan, combine 200g cranberries, 2 tablespoons lemon juice, and 150g white granulated sugar. Cook over medium heat, stirring occasionally, until the cranberries burst and the mixture thickens to a jam-like consistency. Set aside to cool.
👨🍳 2) Make Linzer Cookie Dough: In a bowl, whisk together 250g all-purpose flour, 100g almond flour, and 1/2 teaspoon salt. In a separate large bowl, cream 200g unsalted butter and 110g powdered sugar until light and fluffy. Add 1 teaspoon vanilla extract and 1 large egg, beating until well combined. Gradually add the dry ingredients to the butter mixture, mixing until a dough forms. Divide the dough in half, shape each half into a disk, wrap in plastic wrap, and refrigerate for at least 1 hour.
👨🍳 3) Roll and Cut Cookies: Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper. On a lightly floured surface, roll out one disk of dough to about 1/8-inch thickness. Use a round cookie cutter to cut out an even number of cookies. For half of them, use a smaller cookie cutter to cut out the centers, creating pairs.
👨🍳 4) Bake Cookies: Place the cookies on the prepared baking sheets and bake for 10-12 minutes or until the edges are lightly golden. Let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
👨🍳 5) Assemble Cookies: Spread a thin layer of cranberry jam on the whole cookies. Sprinkle powdered sugar on the cut-out cookies. Sandwich them together to form Linzer cookie pairs.
