👨🍳 1) Prepare the Dough: In a deep bowl, combine 300g all-purpose flour and 100g fine semolina. Add 7g yeast, 15g granulated sugar, 20g grated Parmesan cheese, and 7g salt. Mix well. Make a well in the center of the dry ingredients. Add 40ml olive oil and 220ml lukewarm water. Knead the mixture for 10-15 minutes until a cohesive dough forms. Cover the dough and let it rise for 1 hour in a warm place until it doubles in size.
👨🍳 2) Shape the Rolls: Roll the risen dough onto your work surface. Divide it into 9 portions. Then, divide these portions into 18 smaller pieces (approximately 32g per portion). Shape them into balls. Take two dough pieces and roll them into long strands. Pinch or press the ends together to attach them. Twist one strand around the other, then join the ends to form a ring shape. Repeat with the remaining dough.
👨🍳 3) Preparation for Baking: Place the shaped bread rolls on a baking sheet lined with parchment paper. Brush the dough with green pesto and sprinkle Parmesan cheese on top. Place cherry tomatoes on the rolls.
