Ingredients (with quantities):

    👉 4 or more large eggs
    👉 ½ Salt: tablespoon + 1/3 tablespoon
    👉 Scallion & Ginger
    👉 2 pieces Star Anise
    👉 1 tablespoon Rock Sugar
    👉 3 tablespoons Light Soy Sauce
    👉 1 tablespoon Dark Soy Sauce
    👉 1 tablespoon Oyster Sauce
    👉 White Sesame Seeds
    👉 Oil for deep frying

Instructions:

👨‍🍳 1) Boil and Prepare the Eggs: Place the eggs in a pot and cover them with water. Bring the water to a boil, then reduce heat to a gentle boil for about 8-10 minutes. Remove the boiled eggs and transfer them to a bowl of ice water to cool. Peel off the shells carefully.

👨‍🍳 2) Marinate Eggs: Pat dry the peeled boiled eggs using paper towels. Gently rub the eggs with 1/2 tablespoon of salt, ensuring even coverage. Let them sit for about 15 minutes.

👨‍🍳 3) Prepare Flavoured Marinade: In a bowl, mix 1/3 tablespoon of salt, sliced scallions, ginger, star anise, rock sugar, 3 tablespoons of light soy sauce, 1 tablespoon of dark soy sauce, and 1 tablespoon of oyster sauce.

👨‍🍳 4) Marinate Eggs Again: Place the peeled and salted eggs into the marinade mixture. Cover the bowl and let the eggs marinate in the refrigerator for at least 4 hours or overnight for better flavour absorption.

👨‍🍳 5) Fry the Eggs: Heat oil for deep frying in a pan or pot over medium heat. Once the oil is hot, carefully place the marinated eggs into the oil and fry until golden brown and crispy. Remove the eggs from the oil and place them on a paper towel-lined plate to drain excess oil.

👨‍🍳 6) Garnish and Serve: Sprinkle white sesame seeds over the crispy fried boiled eggs for garnish. Serve the eggs as a flavourful and crispy snack or as a side dish.
